Babe inspects our Harvest Meatloaf just before it goes into the oven this evening.

Harvest Meatloaf
1/4 cup Pepperidge Farms cornbread (or other favorite) packaged stuffing = 57 calories
1/4 cup fat-free chicken broth = 1 calorie
5 cloves roasted garlic (or chopped raw) = 20 calories
1/4 cup Apple-Strawberry Mix = c. 30 calories (apples, strawberries)
3 oz (the size of an average hamburger) lean ground beef = 116 calories
1 Italian sweet sausage = 268 calories
Sea salt and freshly ground pepper to taste = negligible calories
TOTAL for 2 servings = 224 calories = 112 calories per serving
Mix stuffing, broth and garlic together in a medium bowl. Using a fork or your hands, thoroughly blend in sausage and hamburger, and season with a dash of salt and a few grinds of pepper. Shape into a perfect oval (above photo), place on foil-lined baking pan -- for easy clean-up -- and bake 35-40 minutes in preheated 350° oven. Cut in half to make two servings.
After extracting as many samples as possible from Tuck's plate, the Babe came over to our side of the table for further experimentation.
This one really sticks to the ribs, and, as our sis says, "Meatloaf IS the way to a man's heart." Next time we'll press a cube of Havarti into the center for a surprise-inside effect.
This looks like a keeper; Arthur loves meatloaf... :D

Sissy, it's a doggone good thing I had my breakfast before reading this recipe. YUM, YUM, YUM!
I'll let you know how it turns out. One of the shames of my life is that, despite being a spectacular cook in all other respects, I am "meatloaf impaired" to the extreme. If this one comes out tasting good - I am going to owe you BIG TIME.

Oh my goodness. That looks so good! I thought it was turkey initially, but it was meat!
