Key finding from our experimental kitchen: When you reduce your cooking liquid, straight chicken broth yields too much saltiness. Beef Stroganoff Lite with the new, improved Sauce Sisu.

Sauce Sisu:
1 cup (4 oz = 2 shots) vermouth or other white wine = 110 calories
1/ 2 cup no-fat chicken broth = 5 calories
1 cup water = You're soakin' in it
1 chopped shallot = 5 calories
5 cloves roasted garlic, pressed (or chopped fresh) = 20 calories
4 sliced mushrooms = 16 calories
1 tbsp freshly ground pepper = 16 calories
1/4 cup sour cream lite = 60 calories
Total = 252 calories for 4 servings = 63 calories per serving
In a frying pan simmer shallots, garlic and mushrooms in vermouth, broth and water 10 minutes. Add pepper and snow peas and simmer 1 minute more. Blend in sour cream. How sweet -- savory? -- it is.
What fun! Saving America from obesity and making meals more delicious at the same time.
