Actually, it's Pork Suzette, the latest entry in our Cold Turkey Cookbook. Thanks to Sister Sue for the idea. It's easy as pie: Slice horizontal pocket into 1-inch-thick, center-cut pork chop and stuff with apple-strawberry mix. Press together and coat with Shake 'n Bake according to package directions.* Place on foil-lined baking pan and bake 15 minutes in preheated 425° oven. One per person or one for two according to your appetite. Given our new regime, we each had half of one. Tuck's portion poses for the cameras above. He gobbled it up.

Because pork is so much leaner than it was just 10 years ago, less cooking time is desirable for optimum flavor, juiciness and tenderness.
The National Pork Producers Council affirms that pork chops will be wholesome and taste great by following the directions on this package of SHAKE 'N BAKE.
Another new side dish that debuted beside Pork Suzette this evening, Broccoli Puree with Corn: Steam 2 or 3 large clusters of broccoli florets, coarsely chopped, and 1 coarsely chopped onion 40-50 minutes or until tender, add cinnamon to taste and puree in food processor. Steam two ears of fresh corn 10 minutes, cool and slice off kernels. Combine puree and corn and serve hot or cold. Regular readers may notice the puree is a variation of our Broccoli Soup. Just add a can of chicken broth, blend and simmer 5 minutes.
We'll drink a cup of tea to that.

Sounds like you and Tuck are eating well. Yay! As for the drinking... not being much of a drinker myself - I hope that the wagon is moving along nicely for you. *grin*
