Revving up for Valentine's day -- blogged here last year -- Eggs Benedict for two with chilled juices. We thought better of cutting the English muffins into heart shapes with a cookie cutter: What would we do with all those parts of an English muffin that don't look like a heart?

Baby inspects the bag into which we'd decanted unnecessaries from our pocketbook for the trip to the heartland last week. 'Hope we get around to putting everything back where it belongs before spring.
Perfect Hollandaise (enough for Eggs Bennies for two):
Preheat double boiler till water boils, and remove from heat.
Add two egg yolks and whip up with a wire whisk. Add 6 tablespoons of butter, one tablespoon at a time, whisking till blended.
It sounds too easy, but it's true. The main thing is to never let the water boil once the yolks are in the pan. Otherwise they'll curdle. If they should curdle, add a tablespoon of hot water and whisk madly to try to bring things back up to speed.

LOL. Thanks, Lori. For some reason, the lemon fell by the wayside through the years. Perhaps we were out of lemons one Sunday morning, went ahead anyway and discovered the result was more to our taste.
