The powers that be inside the Beltway may be having lobster, shrimp and scallops tonight, but we're going Tex/Mex novae-angliae in honor of the big guy and gal from Crawford:
Let's Roll Con Carne
Chelsea Baked Beans
1 cup black and 1 cup pink beans soaked in water to cover overnight
12 cloves garlic, chopped
4 slices bacon, chopped
1 cup tomato sauce
1 1/2 cups chicken broth
1 cup cooked winter squash
2 tbsp lard
1 cup tomato juice
1 cup cider
Put drained beans and other ingredients into large saucepan and bring to boil. Pour into beanpot or other ovenproof covered pot and bake at 250o 4-6 hours till tender. Peek under the lid every couple of hours and add more liquid as necessary.
Pot Roast with Chelsea Beans
4 cups Chelsea Baked Beans (above)
2 cups baby carrots
1 1/2 lbs London Broil, trimmed of fat
2 cups chicken broth
1 cup tomato juice
Put all ingredients into covered baking dish and bake at 250o 4-6 hours till beef is tender. Set out on a bed of cooked rice and top with a dollop of sour cream.
